A full flavour is achieved by using vanilla extract as well as vanilla sugar, which is easy to make at home
MAKES 25 bars
3/4 cup butter,softened, plus extra for greasing
1 1/2 cups self -rising flour
1 tsp baking powder
1 cup vanilla sugar
3 eggs, beaten
1 1/2 tsp vanilla extract
1-2 tbsp milk
For the topping
1 cup self-rising flour
6 tbsp butter
6 tbsp vanilla sugar
confectioners sugar, for dusting
1. Preheat the oven to 350. Lightly grease and line a 9 x 7in shallow pan with baking parchment.
2. To make the topping, sift the flour into a bowl and rub in the butter until the mixture resembles crumbs. Stir in the vanilla sugar. Set aside.
3. To make the base, sift the flour and baking powder into a bowl. Add the butter , vanilla sugar and eggs. Beat well until smooth, adding the vanilla extract and just enough milk to give a soft dropping consistency.
4. Spoon the mixture into the prepared pan and smooth level.
5. Sprinkle the streusel topping over the surface and press down to cover the cake batter. Bake for 45-60 minutes, or until browned and firm.
6. Cool in the pan for 5 minutes, then turn out on to a wire rack to go cold. Remove the lining paper.
7. Place on a board and dust with powder sugar. Cutinto 25 bars with a sharp knife.
