CHICKEN LIVER KEBABS

 

These may be barbecued outdoors and served with salads and baked potatoes or grilled indoors and served with rice and broccoli.

INGREDIENTS

Serves 4

4oz rindless streaky bacon rashers

12oz chicken livers

12 large ready to eat stoned prunes

12 cherry tomatoes

8 button mushrooms

2 tbsp olive oil

1. Cut each rasher of bacon into two pieces , wrap a piece around each chicken liver and secure in position with wooden cocktail sticks.

2. Wrap the stoned prunes around the cherry tomatoes.

3. Thread the bacon-wrapped livers on to metal skewers with the tomatoes and prunes. Brush with oil. Cover the tomatoes and prunes with a strip of foil to protect them while grilling or barbecuing. Cook for 5 minutes on each side.

4. Remove the cocktail sticks and serve the kebabs immediately.
