LUGAW WITH GOTO AND CHICKEN

Serves 6-8

1 cup short grain rice (thats all u need,just a cup of rice for a perfect lugaw or congee)
12 cups chicken stock
2 scallions,chopped
6 garlic,chopped and fried for garnishing
1 large onion,chopped
2 tsp ginger,thinly sliced
2 tbsp cooking oil
2-3 tbsp patis or to taste
6 chicken wings cut in half
1/2 kilo goto
boiled eggs

Clean goto and boil in water and 1/4 cup vinegar for 3 minutes.Boil in another fresh water with a little salt and cover and let simmer until tender..sliced and set aside.
Rinse rice and place in a large pot. add in the stock  and bring to a boil,then reduce the heat and simmer very gently,stirring occasionally,for 1 1/2  hours,or until it has a porridge-like texture and the rice breaking up.

Saute garlic until brown,add onion and ginger ,stir, and add chicken wings and goto.Season with patis.
Add it to rice mixture and continue simmering until chicken is cooked.

Serve hot with boiled egg,fried garlic and spring onions on top. Or even sliced steak .

Serve with patis and kalamansi juice as sauce
