LENGUA ESTOFADO

NGREDIENTS:

1 tongue about 3  lbs

2 lemon

water

1 large onion

1 16oz canned  stewed tomatoes

salt and pepper

olives

capers

1 tbs cumin

1 can of cream of mushroom

soy sauce

*Rub the tongue with lemon and rinse thoroughly..

*Place the tongue i enough water to cover and simmer for about an hour

* Scrape the skin from the tongue with a knife.

*Marinate the tongue in a mixture of soy sauce.  lemon juice,chopped garlic and pepper ..
Place in fridge for a few hours

*Drain the meat and brown both sides nicely

*Add the browned meat, tomato sauce,  about 6 cups of water,
onion,garlic,peppercorns , canned tomatoe,salt, and  bay leaf.  Simmer for about 2-3 hours or
until the meat is tender, stirring occasionally.  Make sure it doesn’t
dry out or stick to the pan..

*Remove the tongue from the broth and set aside..

*Strain the broth in a colander lined with dampened cheesecloth to remove the solids. Set aside

*Put back the broth to the pot add cream of mushroom,cumin,capers,and olives.cook for another 15 minutes until the sauce thickened.

* Place the tongue on a cutting board and thinly slice. Place the slices back into the sauce and cook for another 5minutes..

Serve with white rice..

I would say that this is the best recipe that you can find ever ..although it takes so long to cook but worth the effort..
