IGADO

1/2 lb pork shoulder,cut into thin slices

1/4lb por liver,cut  thin slices

1 pork heart or kidney,cut thin slices

2-3 hot pepper(optional)

a green pepper

1 red pepper,sliced

4 garlic,minced

1 medium onion,chopped

Marinade:

3 tbs soy sauce

1 tbsp vinegar

1 tsp ground black pepper

Marinate pork in the marinade mixture for an hour or so

Saute garlic,onion,and pork and kidney .Add the marinade and simmer for an hour in low heat..Stir occasionally.

Add  a little water if it dries up. Add liver, red and green pepper and ..correct seasoning

Igado taste so much better without ginger

Serve with white rice
