CRISPY PATA

pork pata

1 large onion

4 bay leaves

5 garlic cloves,sliced

coarse sea salt

water,enough to cover pata

1 tspĀ  peppercorns

oil for frying

Clean the pork pata by removing all hairs and by scraping the skin with a knife. Wash thoroughly.

Place all the ingredients in a big pot .add enough salt..covered and boil over high heat..

Then lower the heat and simmer for about 1 hour or until tender

Drain pata when done..Dry with paper towel

Deep fry until golden brown

Serve with sauce

Mix 3/4 cup of vinegar, 1/4 cup soy sauce, 2 cloves of sliced garlic, 1 head of chopped onion, 1 hot pepper. Salt and pepper to taste.
