CHOPSUEY

Serves 6

2 lbs uncooked shrimp,peeled, deveined
18 quail eggs ,cooked

4 tbsp oil
2 cups sliced napa cabbage,
1 red pepper,sliced
broccolli

1 cup mushrooms

cauliflower
a medium carrot,sliced
20 pcs snow peas
1 medium onion,chopped
4 cloves garlic,chopped
2 tbsp cornstarch mixed with 1/2 cup water
3cups chicken broth
2 tbsp soy sauce  or salt to taste
black ground pepper

Preheat wok over high heat. Put corn oil ,add a little of garlic and onion and stir fry for 1 minute,then add shrimp and 1 tsp of salt and continue to stir fry for another minute.Set aside

Add another 2 tbsp of oil to the wok,when hot add the rest of garlic and onion   .Add chicken broth and simmer for about 15 minutes in medium heat

Then add the vegetables and continue cooking until the vegetables  are just cooked through. Season with soy sauce or salt and black pepper to taste.

. Do not over cook.Gradually stir in cornstarch mixture until sauce is thickened to consistency of thick gravy

Add the shrimp and cooked eggs to the vegetables and simmer for another 1-2 minutes

Serve with rice…
