BEEF KALDERETA

3 lbs beef short ribs
ground pepper or 1 chili pepper
1/4 cup garlic,chopped
1/4 cup oliv e oil

1/2 cup onion chopped

2 bay leaves

1/4 soy sauce

3 tbsp lemon juice
1 can tomato paste
3 potatoes quartered
fish sauce to taste
sweet bell pepper,sliced
star anise (optional)

First, marinate the beef with soy sauce, garlic, onions, pepper, and lemon

Drain beef and set garlic and onion aside for now.

Heat 1/2 of the oil and brown the ribs

Set aside

Saute garlic and onionĀ  and then the browned beef

Add inĀ  tomato paste,stock,bay leaves,red pepper,
and salt to taste and simmer for at least 1 1/2 hour
or until the beef is tender.
Add in potato, and continue cooking until tender and sauce thickens

You may add peas and olives lastly

Serve with rice
