GREEN CURRY PRAWNS

1 fresh lemon grass stalk

1 1/2 tbsp oil

2 tbsp thai green curry paste

4 kaffir lime leaves,torn or shredded lime zest

2 tbsp fish sauce

2 tsp sugar

14 oz coconut milk

1 lb raw prawns,shelled and de veined

handful basil leaves

peel off the tough outer layers of the lemon grass stalks,leaving the tender whitish centre and slice it finely

heat a wok until it is very hot andd oil.now add the green curry paste and stir fry for 2 minutes

add the lemon grass,lime leaves or zest, fish sauce ,sugar and coconut milk.reduce the heat and simmer for 5 minutes

add the prawns and cook for 5 minutes,strring from time to time.add the basil and give the mixture a good stir..

serve……
