PANCIT LUGLUG-PALABOK

1 pound noodles

3 cloves garlic,minced

1/2 cup + 2 tbspolive oil

1 pound ground beef

1/2 pound shrimp,peeled

3 tbsp   fish sauce

4 tbsp butter

1/2 tsp black pepper

1/2 cup pork rinds cracklings,finely crushed

1/4 cup smoked fish(tinapa) finely shredded and deboned

3 hard-boiled eggs,chopped coarsly

1/4 cup greens onions,finely chopped

ANNATTO SAUCE

dissolve 2 tbsp annatto powder in a 2 tbsp oil

Cook the noodles in boiling water for about 10 minutes..

Drain  in a colander and stir in butter.

In a  skillet over medium heat,saute the garlic in 2 tbsp of the oil until nicely brown . Remove the garlic from the oil and set aside to use for garnishing.

Saute the ground beef in the garlic -flavored oil for 10 minutes. Add the shrimp and fish sauce and black pepper and simmer for another 5 minutes

Then add the anatto sauce , pork cracklings,and green onions..correct seasoning ..mix with noodles.leave some to  sprinkle on top together with chopped eggs,fried garlic and tinapa

Just use fish sauce for seasoning and u will be suprised how good  my very own recipe of pancit luglug

Serve with lemon wedges

Serve warm..makes 6-8 servings
