ESCABECHE (SWEET AND SOUR FRIED FISH)

Preheat oven to 250 F.

2 pounds whole bass or red snapper, cleaned

1/2 tsp black pepper

2 tsp salt

2 lemon slices

1 cup + 2 tbsp vegetables oil

3 cloves garlic,minced

1 large onion,sliced

ginger sliced

1 red bell pepper,sliced

1 green bell pepper ,sliced

1 small carrot

1/4 cup distilled white vinegar

1/2 cup water

1/4 cup brown sugar

2 tbsp soy sauce

1 small can of pineapple

1 tbsp cornstarch,dissolved in 2 tbsp water

Score the fish 1 or 2 times on both sides,rub all ove the lemon slices, sprinkle with salt and pepper.Let stand for 30 minutes.Drain and pat dry.

In a skillet,heat 1 cup oil and fry the fish until it is crispy and golden brown all over,15-20 minutes on each side. Drain on paper towels. Transfer to a serving dish and keep warm in the oven.

For the sauce

Heat the 2 tbsp of oil in a saucepan and saute the garlic,onions and ginger until the onions are soft and transculent.

Add the bell peppers and carrots and saute forĀ  3 minutes.

Then stir in the vinegar,water,sugar, salt,soy sauce,pineapple rings and the juice. Simmer for 15 minutes more. Stir the cornstarch and water mixture and add it to the sauce,stirring while it thickens.

Pour the sauce over the fried fish. makes 4-5 servings
